Banbury Tarts - An Old English Christmas method For Today

The formula for Banbury Tarts goes back centuries. Early recipes contained soaked raisins and sugar. Extra fruit was added to later recipes. My mother-in-law made these tarts every Christmas. She got the formula from her English grandmother and it has been passed down to succeeding generations.

Centuries ago these mini pies were served at church gatherings and afternoon teas. They are also a thoughtful, labor-intensive gift. When you give these cookies to a family member, friend or neighbor, you are not only giving them a dessert, you are giving them the gift of time. Though they look sturdy, the tarts can break, so pack them in a box or tray for gift giving.

Food Recipe

Our family formula begins with ground fruit that is refrigerated for a week. An old fashioned metal meat polisher was used to chop the fruit. Now, thanks to the invention of the food processor, you can make the filling in minutes. Thanks to crust mixes and refrigerated crusts, you don't even have to make the pastry. Of course, you all the time have the choice of production your beloved crust from scratch.

There are many recipes for Banbury tarts on the Internet. Some use candied cirtus peel, while others call for dried figs. Butter may also be added to the filling, though this is not an ingredient in our family recipe.

I was surprised to learn that some cooks do not fold the dough circles in half. Instead, they make one-crust, mini pies. The baking climatic characteristic varies, too, and you can bake the cookies at 375 degrees for less time.

Remember to wash the grapefruit, orange and lemon before processing them. According to my mother-in-law's handwritten recipe, pound cake crumbs may be substituted for cracker crumbs. The juice in citrus fruit varies and, if the filling seems dry, add a little ore orange juice. Do not over-fill the tarts or you will have a big clean-up job on your hands. Banbury Tarts smell and taste like the holidays. Here is our historic family recipe.

Ingredients

1/2 pound currants

1 pound raisins (dark or golden)

1 large orange, juice and rind

1 lemon, juice and rind

3 tablespoons cracker crumbs (My mother-in-law used Ritz.)

1 cup sugar

1 large egg, room temperature

1 package refrigerated pie crust or icy puff pastry

Extra sugar (regular or colored holiday sugar)

Method

Cut the fruit into small pieces. Place in food processor. Add cracker crumbs, sugar, and egg. Pulse until composition is combined, yet still has texture. Pour into food package and refrigerate for one week. Cut the pie crust into 2 1/2-inch or 3-inch circles. Put a rounded tablespoon of filling in the center of each circle. Fold crust over to make half moons. Crimp the edges with a fork and sprinkle tops with sugar. Bake in a 350 degree oven for 15-20 minutes, or until the crust is firm and lightly browned.

Meditation is the practice of bringing your mind inward by focusing the attention on a single object in total concentration. * As purity begins with the physical body, cleanse your body before meditation.

* The seat for meditation or asanas should be made of wool on the bottom and cotton cloth on the top. Avoid sitting on the bare ground, since your energy may be drained off, and-most importantly-do not share your asana with anyone.

* Regularity of time, place, and practice areimportant, as they condition your mind to slow down, paving the path to deeper levels of meditation. Ten minutes every day is better than one hour every now and then.

* The best times to meditate are early dawn and dusk, when the atmosphere is quiet and charged with special spiritual energy. If it is not possible to sit for meditation at these times, choose a specific time and stick to it everyday.

* Try to have a separate room for meditation. As meditation is repeated, the energy will increase and the atmosphere will be filled with peace and purity.

* When sitting, face North or East in order to take advantage of favorable magnetic vibrations.

* Sit in a steady, comfortable, cross-legged position with the spine and neck straight but not tense.

* Keep yourrhythmic breathing: inhale and exhale for three seconds for three seconds. The breath, the prana (vital force) and the mind are connected. Regulating and controlling one will regulate and control the other.

* Do not force your mind to be still, as this will just set in motion more thought waves. Allow it to wander without focusing or following any thought, by concentrating on a mantra (word of power) or specific technique. With practice, it will eventually become still.

* Select a focal point for your mind to rest. Most people choose the Ajna chakra (third eye), as it is close to the eyes and easy to focus on. Eventually, you may choose the Anahata chakra (heart) to go deeper.

* If you are not using a mantra, you can also focus on a neutral or uplifting object or imagewhile concentrating on your breath as you inhale and exhale.

* Attempt to live a pious, pure, sattvic life. Treat your body as a temple. Pure, Strive to eat nutritious food and avoid intoxicants. A vegetarian diet will decrease certain toxic energy and accelerate your spiritual development.

Middle School Graduation and Chaotic Bedroom Redecorating - Growing Up So Soon?

With young ones graduating from Middle School, the girls are putting their exiguous princess days behind and wanting to redo the bedroom. Oh my, this sounds pretty deep. Well, it is a big deal, especially for the kids. Formative years, yep. These kids are in them. Right now, you are at the cusp of it all. It is like cooking a recipe. You get out the ingredients, reconsider what you are making, blend and check your progress, and it becomes the food as it cooks. Same with the kids. The ingredients are those things that pertain to who they have been and what they are becoming. Together you look it over and form an idea of what you are baking. Yet it is their recipe, so they take the lead. You also advise, encourage, set limits, and provide help.

So, their room appears outgrown; it is chaotic and unpleasant. Toys are strewn; clothes overstuff the drawers. Popular outfits do not fit, but take up drawer space. A child who once was fussy about their collections now is careless. They are unhappy with the space and irritable about touching it. It becomes a can't win and you give up, maybe by grounding them or just ignoring it. No one is happy.

You all need a fresh start.

So, let's look together at the ingredients and what they mean. All those outgrown clothes and toys are a association for the child with their younger and comfortable self. You are not the only one fearful of growing up. They are thrilled with the excitement of new developments, but know they will miss the warmth of close cuddles and story time, even if they don't say it. The old stuff keeps them connected to who they have been and the love they have absorbed. You need to find a way to keep some of that stuff close by in their life, maybe in a more orderly way.

As they redo their rooms, you also can provide structures for the new - parent approved - activities. You can talk together about their interests this summer as you design a plan for the room. It will also generate plans for the fall as you maintain their action in those things, with sports or clubs, and even trips here and there. They may become opinionated, but most astonishingly they are suddenly intellectually alive! What a surprise to the unsuspecting parent.

So, this room thing, and their new interests can be a great platform to begin getting to know this new kid under your roof. Listen, begin to form coarse outlooks together.
